Why is it better to start with two hives? Certainly starting with 1 hive is fine.
However, when starting with two hives you have the advantage of comparing
your hives and sharing resources between the hives. Even if one hive loses their
queen, you can move over a frame of eggs from your queen-right hive and the
queenless hive will raise their own queen from that frame of eggs that you moved
